Caleb C. Scutt oral history, 1963-1964.

In this interview, Mr. Scutt discusses the New York State canning industry. Topics include: canning in the 1890's; his experiences establishing a cannery in Red Creek, N.Y. in 1912; the development of canning technology from approximately 1913 until 1953; his impressions of the New York State Canners and Freezers Association; competition between New York State and California in apples and Bartlett pears; processing apples for pie filling; the development of Comstock Foods and his recollection of S.E. Comstock; and his experiences with organized labor. Also included as a 7 page appendix is an address Mr. Scutt gave to the New York State Canners and Freezers Association entitled "The Canning Industry as I First Knew It."
